DIY: Rainbow Cake

Sugar Bay has turned 15 years old, and we’re celebrating big this September! We’ve got our waterslides up and running and we’re ready to party on. We just celebrated in style this past weekend, with cake, balloons, lots of splashing and our official opening of the waterslides. In celebration of our colourful Splash Birthday week, we’ve decided to share an awesome rainbow cake recipe with you. 
 
DIY: Rainbow Cake

 

Preparation time: 60 Minutes

Ingredients:

For the cake:
  • 350g Self-raising flour
  • 3tsp Baking powder
  • 350g Soft unsalted butter
  • 350g Caster sugar
  • 6 Large free range eggs
  • 1 Tablespoon vanilla extract
  • 40ml Semi-skimmed milk
  • Gel food colouring (Rainbow colours)
For the Icing:
  • 100g butter, soft
  • 600g icing sugar, sifted
Instructions:

 

For the cake:
  1. Preheat your oven to 170 degrees.
  2. Cream your butter and sugar until combined.
  3. Add eggs one at a time followed by a little of the flour.
  4. Mix well before adding remaining flour, baking powder and vanilla extract.
  5. Add up to 40ml semi-skimmed milk - adding a tablespoon at a time and stopping when you get to a consistency that you're happy with.
  6. Next, divide your mix into 6 bowls (including your original bowl) to do your colours.
  7. Add a cap full of your gel food colouring (in each colour) to each bowl and mix until you have the vibrant shade you want.
  8. Pop them into the oven and keep a close eye on them, taking them out as soon as a skewer to the centre came out clean.
  9. When your cakes are cool, preferably wrap them in cling film and pop them into the fridge for a day.
For the frosting:
  1. Combine the icing sugar and butter. When all the icing sugar is incorporated, pop the frosting into the fridge to chill.
To finish:
  1. Begin stacking the cake, taking care to position the layers as evenly as possible, so that the sides of the cake are as straight as they can be.
  2. Apply a crumb coat of frosting to the cake, filling any gaps between layers. The colours of the cake will be very apparent, but don't worry. Chill for 1 hour.
  3. Apply a second coat of frosting. Chill for 1 hour.
  4. Apply a third coat of frosting. Chill until set.
      
    Tasty Tip:

    Decorate with rainbow sprinkles!
