What's for Lunch?





That's the big question. And we have the answer!



With the kids heading back to school and with the busy lifestyles of parents, packing your kids a healthy lunch sounds way more challenging than handing them a R20-00 note to grab themselves a pie. Sounds easy, yes, but it gets hard when you have to deal with dragging a lazy and unhealthy child regularly to the gym and to the doctor.



But you can avoid this. And we've decided to help you with our easy and fun five-day school lunch plan for healthy, happy, growing kids! 



Day:
Lunch: Ingredients: Directions:
Monday Strawberry Shortcake Wa ffle-wich
*1 tablespoon cream cheese
* 2-3 strawberries, sliced
*2 whole-wheat wa ffles (home made or store bought

1.Spread cream cheese on one side of each waffl es.
2. Slice strawberries and place on top of cream cheese.
3. Serve with fresh fruit, veggies & treat of choice.
Tuesday Pizzadillas
*1 tortilla
* tomato sauce/pizza sauce
*shredded mozzarella cheese
*spinach leaves
*black olives

1. Lay tortilla on a flat surface. Spread pizza sauce evenly on tortilla.
2. Layer pizza toppings on one half of the tortilla, fold other side over into a half moon.
3. Grill or toast pizza quesadilla until cheese is melted. Allow to cool slightly before cutting.
Wednesday Strawberry Cheesecake Bites
*1/4 tub whipped cream cheese
*1/2 cup powdered sugar
*2-3 tablespoons cracker crumbs
*16 medium-large strawberries

1. In a food processor, combine cream cheese and powdered sugar.
2. Put the combined cream cheese and powdered sugar mixture in a bowl.
3. Put the cracker crumbs into another bowl.
4. Dip the widened end of the strawberry in the cream cheese mixture, then roll it around in the cracker crumbs.
Thursday Broccoli and Cheese Mini Quiches
*½ cup chopped broccoli
*6 eggs
*3 tablespoons milk
*1 cup shredded cheddar
*½ cup all purpose flour
*½ tsp corn starch
*½ tsp baking powder

1. Preheat the oven to 200°C. Grease a 24-cup mini mu ffin pan.
2. In a medium bowl, beat the eggs. Stir in the baking mix(flour, cornstarch,baking powder), milk, cheese, and broccoli.
3. Spoon into greased mu ffin cups.
4. Bake for 10 to 15 minutes in the preheated oven or until the tops are lightly browned. Allow mini
quiches to cool in the pan before carefully removing with a small knife or spatula.
Friday
Egg Salad with Chicken and Cheese

*4 boiled eggs, diced
*1 tablespoon mustard sauce
*1 teaspoon paprika
*1 tablespoon chives, chopped (optional)
*2-3 tablespoons Greek yoghurt
*salt & pepper to taste
*oven roasted chicken
*cheese cubes
1. In a bowl combine all ingredients and mix thoroughly. Cover and keep in a fridge.
